Stay fresh and healthy this summer with a Vegan Buddha Bowl!

Since ILQ’s resident chef and foodie expert, Mama Baba Ganoush, has taken a short hiatus to the land of Oz (Australia), we’ll be providing you with short, fun recipe videos for the summer! In our first episode of #DineOutDoha, we’ll be making a refreshing Vegan Buddha Bowl! 

Veganism is all the rage now, and although a lot of people are skeptical about vegan diets it really isn’t all that bad. This particular Vegan Buddha Bowl combines all your favorite ingredients and is both healthy and super refreshing! The combination of avocado with the red pepper dressing provides a much desired cool/fiery kick. Check out our video — inspired by the Well and Full blog’s recipe! 

Ingredients

Quinoa

1 cup quinoa
2 cups water

Red pepper dressing

1 red bell pepper (without seeds and ribs)
2 tbsp olive oil
1 lemon, squeezed
1/2 tsp pepper
1/2 tsp salt
1 tsp paprika
1/4 cup fresh coriander
1 red chili (optional)
1 clove garlic (optional)

Chickpeas

1 1/2 cups cooked chickpeas
A drizzle of olive oil
1/2 tsp salt
1 tsp paprika
1 tsp chili powder
1/4 tsp turmeric
1/2 tsp oregano
1 clove garlic, diced (optional)

Other

Mixed salad greens (spring mix)
Avocados
Coriander for garnish

Preparation

-First, cook the quinoa. Put the quinoa in a saucepan and add in the two cups of water. Bring it to a boil. After it boils for about 2 minutes, simmer for about 15 minutes until all water is absorbed. When done, remove from heat and keep covered on the side. 

-While the quinoa is simmering, you can prepare the red pepper dressing. Blend all the ingredients in the blender until smooth. Once it’s done, keep it aside.

-The original recipe asks for the chickpeas to be baked, but for extra flavor we tossed the chickpeas in a frying pan. If the chickpeas come in a can, make sure to leave in a little bit of the liquid so it cooks through in the frying pan. Cook the chickpeas and spices together until the chickpeas turn a yummy golden shade. Put aside to cool.

-To make red pepper dressing, add all dressing ingredients to a blender and blend until smooth.

-Assembly time! You can use any bowl you like, but for aesthetic value use a wooden bowl! Put in the quinoa, salad mix, avocado, and chickpeas. Top off the bowl with red pepper sauce, and use coriander to garnish — it adds more flavor!
