The Italian cuisine is all about quality, authenticity, and simplicity. From the process of picking out the freshest produce in the market, to combining a number of different elements and techniques and creating a truly unique taste as a result, preparing an Italian dish is nothing short of being a culinary art form.

Fabio’s first opened in Aziziya in 2010 and became very popular in a short span of time. Because of its popularity and renown for its home delivery service to any location in Doha, it recently opened up a new branch in Al Wakrah. Their new branch is much bigger than their branch in Aziziya.

An archetype of Italian culture, when dining-in at Fabio’s you’re likely to meet and interact with Fabio Malerba himself - the owner of the restaurant - or one of his family-members, as someone from the family is always overseeing the restaurant. At Fabio’s you’re treated to traditional Italian hospitality and food that tastes as if it’s prepared in the kitchen of a comfortable and homely rustic cottage in a Southern Italian town.

The restaurant is bright and vibrant. The walls are half orange in color and half brick; reminiscent of the colorful villas in Burano Village in Venice, which enhances the atmosphere of homeliness and authenticity. An intimate setting with high-tables, high-chairs, and a clear view of the kitchen-top counter, where the chef can frequently be seen kneading pizza dough, Fabio’s layout and design elements are bonafide. The restaurant walls are adorned with beautiful paintings of Genoa Bay and colorful Italian Vespas in front of the Roman Colosseum. From the depths of the kitchen you can hear the hustle and bustle as the chefs work behind-the-scenes to prepare our meal.

The aromas are tantalizing as they waft through the kitchen into the restaurant. First we’re served focaccia bread with rosemary fresca dal forno (fresh out of the oven!). With a side of olive oil and vinegar, the golden-baked focaccia makes for a light and tasty appetizer. The entree arrives and it’s a sight to behold! In front of us sat two large cheesy pizzas, each half a different topping.

One of the pizzas is a cheesy meat delight; half Bufalina, half Fabio’s - named after the restaurant and owner, and the other is a seafood surprise; half Frutti de Mare and half Desiree, named after one of Fabio’s daughters.

The Bufalina half is made with tomato sauce, mozzarella, buffalo mozzarella, cherry tomatoes, and rocket leaves, and the Fabio’s half is made with tomato sauce, mozzarella, bresaola beef, rocket leaves, parmesan leaves. The cheesy meat delight is fantastic and super fresh! The veggies tasted as if they were just picked straight from the farm and brought to the table. The bresaola was tender and very tasty, with a subtle smokiness, and when combined with the cheese and tomato sauce it was an eruption of juicy flavor!

The seafood surprise pizza is definitely a must-try! Half Frutti de Mare, which is made with tomato sauce, mozzarella, mixed seafood, crab stick, fresh garlic, garlic oil, and parsley, and half Desiree, which is made with tomato sauce, cream, smoked salmon, and buffalo mozzarella; this combination is a seafood lovers’ dream come true! You can taste the freshness of the seafood, which is melted into the buffalo mozzarella. The Desiree is served so hot and cheesy that it literally oozes off your slice. The Frutti de Mare has a nice sweetness mixed with nuttiness, which comes from the seafood and the garlic. My personal favorite is the half Bufalina and half Fabio’s.

Most of the ingredients that the restaurant uses in their food, such as their cheese and their dry-cut meats, are imported straight from Italy. It’s 100 percent halal. The chefs at Fabio’s have been directly trained by Fabio and his wife, and all the recipes have been perfected by Fabio himself. Fabio is meticulous with the preparation of all the food and wants each dish to be served as close to perfection as possible.

Their menu has over 90+ items, which includes a huge selection of pastas and pizzas, soups, salads, sandwiches, and desserts. Some of their pizza toppings can’t be found anywhere else in Doha, such as their Zola & Mele which is made with mozzarella, gorgonzola cheese, and apples! Fabio has even named some of the other menu items after his family members, such as Alice, Brian, and Ryan.

Fabio’s has fostered a close relationship with all of their customers, and in order to make the delivery process much more efficient for newcomers and regulars alike, they’ve created a free app, which is available for download on the Apple app store and Google Play!

Buon appetito, enjoy your next Italian gastronomic experience at Fabio’s Pizza & Italian Food.
